Old Cuban

Ingredients

  • 45 ml Aged rum
  • 22.5 ml Lime juice
  • 30 ml Sugar syrup
  • 6 leaves Mint leaves
  • 2 dashes Angostura bitters
  • 60 ml Champagne
  • Garnish Mint sprig

Preparation

  1. Lightly muddle the mint with the lime juice and sugar syrup.
  2. Add the rum and bitters, then shake hard with ice.
  3. Double-strain into a chilled coupe.
  4. Top with champagne.

Origin Story

The Old Cuban was created in the early 2000s by bartender Audrey Saunders at the Pegu Club in New York City, blending elements of a classic mojito with champagne. It reflects the resurgence of interest in craft cocktails and the fusion of flavors from different cultures.
